Thanks for the suggestions on increasing your veggies intake. Actually especially the number 1; we were told to consume veggies with breakfast, so this is cool.
Normally a take some tomatoe slices on my whole wheat bread but adding some fresh spinach leaves to it will be more helpfull.
Tuesday’s rock.
Why?
Because Tuesday is the day each week that I get to stock my fridge to the brim with fresh produce and spend time with one of my favorite people.
You see, about a month ago my über friend Mimi and I bought a “share” of the summer harvest at a local CSA (community supported agriculture) farm, and every Tuesday we get to go pick up our share of what’s “in season” and even do a little picking to boot.
Yesterday’s “picking” crops were raspberries, green beans, and cucumbers, although I think more raspberries probably went in our mouths than in the container :-)
Needless to say, I’ve now got veggies galore sitting on my counter and in my fridge—and that’s what everyone’s house should look like as far as I’m concerned.
At the same time, I’m a realist, and know that if I’m going to get the recommended 8-10 servings of fruit and veggies each day, it’s going to require me getting a little creative.
And perhaps you’ve found yourself in a similar situation, having a desire to eat more veggies (for their million and one health benefits), but struggling to do so.
Well, that’s what today’s blog post is all about, my friend! Three simple, creative ways to get more veggies in and boost the healthfulness of your diet:
1. Mix Veggies in Omelets & Casseroles – If you’re wanting to eat more vegetables, but aren’t really keen on their taste, a great way to “disguise” them is in omelets and casseroles. Add mushrooms, spinach, peppers, tomatoes, carrots, green beans, and whatever else might go well with the dish you’re preparing. This is a great way to get the kids to eat their veggies, too!
2. Use Raw Veggies as a Late Night Snack – Who doesn’t get late night cravings? Everyone does! And the best way to satisfy those cravings is with raw veggies as they are very low in calories, high in fiber, and have a negligible impact on blood sugar and insulin. And if you’re not crazy about plain raw vegetables, dip ‘em! Try carrot sticks in salsa or broccoli in light Italian dressing.
3. Puree then Mix – Here’s a quick way to add a ton of veggies to a meal virtually unnoticed. Simply throw a bunch of veggies into the food processor, puree, and then mix the puree into ground beef. Use this little trick for meatloaf, burgers, taco meat, or any other recipe calling for ground beef!

Almost any vegetable tastes great stir-fried.
And in the cooler weather, a hearty vegetable soup is really satisfying. I like including less-used vegetables like turnips, beets and cabbage, which add a lot to the flavor. Add seasonings like celery salt, paprika, bay leaf and marjoram.

I do something like the omelets thing I get some of my favorite veggies, tomatoes, onions, garlic slice them up turn the skillet on, I usually put on extra virgin olive oil, but whatever’s good for you and start mixing it up. After a bit I put in some sort of protein, chicken or maybe beef, and I also add some already cooked brown rice to make a stir-fry add seasoning if you want, it’s always a favorite that I love to make.

I do have to admit that eating more veggies can be tough some times. My wife discovered the trick of adding veggies pureed to her spagetti sauce. All I can say is fantastic! I have found that adding veggies to scrambled eggs makes for a very filling meal that keeps you feeling full for hours.

Most of d time, I always try to find a way to add vege in my food or my 7 years old daughter. I put some chopped vege in my daughters soup or put spinach in beef. I think it works well!
Would love to know more ways to add vege in food.
