Who doesn’t love pancakes on the weekend?
Um, no one, that’s who.
Well, great news. You can have your cake and eat it too with this high protein Pumpkin Pancake recipe.
Thank my main man Jay Hunter from Prograde Nutrition for this one.
High Protein Pumpkin Pancakes
Ingredients
1 cup pumpkin puree (pure pumpkin, not pumpkin pie filling)
1 teaspoon cinnamon
Pinch of nutmeg
1 scoop of Prograde Protein (the Vanilla flavored, Stevia sweetened protein powder)
1/2 cup of whole wheat flour
2 teaspoons of baking powder
Instructions
Combine the pumpkin puree, cinnamon, nutmeg, and protein powder in a small bowl. In another bowl, combine the flour and baking powder. Fold the pumpkin mixture into the flour mixture. If the mixture is too thick, thin with a little water.
Preheat a nonstick skillet over medium-high heat. Spoon the batter into the skillet. Cook until bubbles appear on the top and the edges look dry. Flip and cook until the second side is golden brown. Top with all-natural maple syrup if desired.
Super easy. Super tasty. Super healthy. And just in time for the weekend :)

We can’t get the Prograd protein in Australia. I’ll have to try another protein powder. So, like Jacqueline, how many ml’s is one scoop? The recipe sounds great and I love pumpkin.

Generally 1 scoop is approx 1/4 cup. I’m guessing it’s about 100ml. 4 Tablespoons is equal to 1/4 cup.

Hey if you want to stay away from wheat, you can replace the wheat flour with ground oats or buy oat flour. Or if you want it a little more chunky don’t grind the oats completely.
A scoop of protein powder is usually around 30 grams – and you can lessen the wheat impact by using spelt flour (old strain of wheat so not nearly as much gluten). Enjoy!

Sorry this is quite random but I was looking through some of my CYWT downloads and I read about how carbs + fat without protein are a deadly combination in one of the free extras I got. Does this mean that eating nuts with oatmeal is alright? Cos the nuts are mostly fat with some protein… I was just slightly confused. And for the cheat days carbs + fat are still fine right? Pumpkin pancakes sound delish- it’s a shame we don’t have prograde in the UK.

I made the pancakes this morning and subs 1/4 cup millet flour and 1/4 cup quinoa flour for the 1/2 cup whole wheat flour… They turn out amazingly good. Excellent idea.
1.- Just wanting to know if there is another quality protein that you endorse. I live in UAE and I think prograde can ship here too, but I would preffer to buy something that I can get from here. So any other protein powder that you like?
2.- How much of this pancakes should I eat? What is the serving per person? Is it better to have them before or after workout?

I made the pancakes for breakfast and I absolutely loved them. For a gluten-free option I subs 1/4 cup millet flour plus 1/4 cup quinoa flour for the 1/2 cup whole wheat flour. I served them with agave sirup and they turned out really, really good.
I was wondering…:
1.- Other than the Prograde protein powder, do you endorse any other brand? I live in UAE and I beleive prograde ships here too, but there are a lot of regulations that need to take into consideration before getting the product to me. So what I really want to know is if you have other company that you trust and doesn’t have junk in it? There is a chance that they have the product available here.
2.- How many pancakes is a serving per person? Is it better to have them before or after workout?

Why not make them gluten free and use coconut flour, even better!

I checked again and yes, I can get Prograde shipped out here. Unfortunately, when I went to place the order, I noted that shipping for 2 bottles is a whopping $45.00 (or close enough) per shipment. That’s about 1/2 of the cost of the order itself…. what a pity!

How about using coconut flour instead of whole wheat! (you would have to add eggs, though.)
Try 1/4 cup of millet flour plus 1/4 cup quinoa flour for a gluten free option. Deeeelicious!
