I make this stuff all the time. Its a winner.
Try adding fresh lime juice rather than lemon, it gives a nice zing.
I also use diced red onions for colour and flavor and last but not least add a couple of cloves of fresh garlic, then you get the benefit of those great foods.
I live in Dubai and we have access to australian and kenyan avocados. The kenyan ones are very green and smooth skinned. The ones from OZ are nobly and dark brown in colour. The brown avocados are almost always way better in texture than the green , even when they are soft. Needless to say the ones from OZ are twice the price..typical!! Enjoy.

I love Guac on my meats, it's pretty much the healthiest and best tasting thing out there. Experiment for yourself but I like it best on chicken and beef, usually not so much with fish, but it depends on what kind of fish.

I don't even watch TV.

I know this sounds weird, but avocados also make good mousse. Check the recipe at the Toxin Free Future website...just one of many recipes out there.

Not a big fan of avocado, but will give it a try. How do you eat this? I don't want to add more breads and this doesn't sound like something to eat by itself, with a spoon.

Hi Carmel,
I live in CA now, but am a transplant from GA! When I first came out here in 1997, I didn't even know what an avocado was! Then I saw people putting them on sandwiches and I did not understand why! I just did NOT get the avocado thing! That was until I was at El Torito one day with some friends and tried the guacamole! THAT changed my whole mindset about avocadoes! For a while, I'd only eat just guacamole, but not I enjoy eating avocadoes by themselves! So hopefully that might be a suitable transition for you too!! :-)

Can't stand the show, DHW....but love the guac! It's even simpler to make if you chop up the avocados and simply add "pico de gallo" (which is available in almost any grocery store in the fresh produce/deli area), the juice of a couple small limes and salt and pepper to taste. I love cilantro so I add additional fresh chopped cilantro (it should already be in the pico de gallo).

Try mashing up some avocado with drained tuna, makes quite a tastey mixure. <b>@ <a href="#comment-40545" title="Go to comment of this author" rel="nofollow">Carmel</a></b>:

yep, eva's certainly a great looking woman.... genes and a lot of work i'm sure....

guacamole recipe is fine except the lemons... 4 lemons for 8 large avocados is just way too much lemon. i'm always tickled to see notherners like bobby flay add so doggone much lime or lemon ... and yes, lime is better, more authenic... all recipes are all about balance and of course personal taste so squeeze those lemons if it's your cup of tea but i'd caution you to do it one at a time.
